Classic Pesto
Pesto is a versatile and flavorful sauce originating from Italy, known for its fresh and aromatic ingredients. Traditionally made with basil, garlic, pine nuts, Parmesan cheese, and olive oil, pesto has since inspired many variations that incorporate different herbs, nuts, and even vegetables. Popular varieties include sun-dried tomato pesto, spinach and walnut pesto, and arugula and almond pesto—each offering a unique twist. For this recipe, we’ll focus on the classic and traditional basil pesto, highlighting the simple yet rich flavors that make it a beloved staple.
Ingredients:
2 cups fresh basil leaves, packed
½ cup extra virgin olive oil
¼ cup pine nuts
2 garlic cloves, minced
½ cup freshly grated Parmesan cheese
¼ tsp sea salt, or to taste
¼ tsp black pepper, or to taste
1 tbsp lemon juice (optional, for brightness)
Instructions:
In a food processor, combine the fresh basil leaves, minced garlic, pine nuts, and Parmesan cheese. Pulse until the ingredients are finely chopped.
With the processor running, slowly pour in the olive oil until the mixture becomes smooth and creamy.
Add salt, pepper, and lemon juice (if using), then pulse to combine. Taste and adjust seasoning as needed.
Serve immediately with pasta, as a spread for sandwiches, or store in an airtight container in the refrigerator for up to one week.
