Lasagne Rolls

If you're looking to stock your freezer with an easy, low-prep lasagne, try these rolls.

This is prep-ahead pasta perfection!

Ingredients:

12 lasagna noodles

1 lb ground beef

1 cup ricotta cheese

1 cup chopped fresh spinach

1 egg

1 cup shredded mozzarella cheese

2 cups marinara sauce (follow us for recipe)

½ tsp garlic powder

½ tsp dried oregano

2 cloves of garlic, minced

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Grated parmesan cheese (optional)

Instructions:

Preheat your oven to 375°F and prepare a baking dish with non-stick cooking spray.

Cook lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean surface.

In a skillet, brown ground beef over medium heat until fully cooked. Drain excess fat. Add garlic, dried oregano, salt, and pepper to taste. Stir in spinach and cook until wilted. Remove from heat and let it cool slightly.

In a bowl, combine ricotta cheese and egg. Mix until smooth. Spread a thin layer of ricotta mixture evenly over each lasagna noodle. Top with a spoonful of the ground beef mixture. Roll up each noodle tightly.

Spread a thin layer of marinara sauce on the bottom of the prepared baking dish. Place each lasagna roll in the dish. Pour remaining marinara sauce over the rolls.

Cover the baking dish and bake for 20-25 minutes, until heated through.

Remove from oven and sprinkle shredded mozzarella cheese over the top. Return to oven, uncovered, and bake for an additional 5-10 minutes, until cheese is bubbly and lightly golden.

Garnish with fresh basil leaves and grated parmesan if desired. Serve hot.
