Ingredients:
4 center-cut slices bacon, chopped
2 tablespoons olive oil
2 cloves garlic, minced
Zest and juice of 1 lemon
½ cup freshly squeezed orange juice
1 teaspoon orange zest
1 ½ tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
⅛ teaspoon sea salt
⅛ teaspoon freshly ground black pepper
Instructions:
Step 1: In a non-stick skillet over medium heat, cook the chopped bacon until crispy. Remove the cooked bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Set aside.
Step 2: In the same skillet with the bacon drippings, add the olive oil and minced garlic. Cook for about 1 minute until the garlic becomes fragrant.
Step 3: Add the lemon zest, lemon juice, orange juice, orange zest, apple cider vinegar, Dijon mustard, and honey to the skillet. Stir to combine and let it simmer for about 2-3 minutes to allow the flavors to meld together.
Step 4: Season the warm vinaigrette with salt and pepper to taste.
Serving Suggestions:
Pour the warm citrus bacon vinaigrette over the salad just before serving. Toss gently to coat the salad evenly with the dressing.
The smokiness of the bacon in this vinaigrette complements a spinach, berries, and walnut salad.
